In just a few days we will start the halfway point of the year – June. It doesn’t seem possible that we are nearly halfway through 2019, but at the same time I am thankful. It was a long and hard winter this year for many of us in the northern half of the United States.
And while my kids love the snow, they do not like being cooped up for weeks at a time. Of course now that the threat of heat waves are quickly approaching, they want the cooler weather back. But then again, they love swimming in the pool almost daily, so I guess the trade-off is fair.
Summers are usually pretty laid back in our house, but several years ago I realized that without a meal plan, even a loose one, we can spend way too much on groceries. And now that our oldest is growing into a man-child (he is almost 14 and going on 6’2″) and two preteens in the house, our grocery bill takes enough of a hit so I can’t afford anything more.
During the summer months we like to grill outside as much as possible, so we watch for our favorite meats to go on sale and snag them when we can. We also stock up on fruits and vegetables as we can, so we can make a quick fruit salsa or grill some veggies when we want.
Special Meals for the Month
June doesn’t have much in the way of holidays, but we do celebrate fathers and the first day of summer. And we’ve got you covered some delicious recipes perfect for both! Whether you buy him a new grill or he has a favorite one, these grilled burger recipes are not only delicious, but also memorable. And while you’ve got the grill fired up, give one of these panini sandwiches a try!
The official first day of summer may not be until June 21st, but that doesn’t mean you can’t start celebrating now! These slushy recipes are a great way to cool down during those hot summer days. If the kids are tired of just plain water or lemonade, have them try some of these refreshing beverages or some homemade popsicles to cool off after a day outside.
Choose from Two Meal Plans
The regular meal plan includes slow cooker meals on Sundays and Wednesdays, for a break in the kitchen or those busy days. There are a variety of soups to get you through those chilly nights as we welcome in spring and some salads to break it up just a bit.
Or choose the Instant Pot Meal Plan. On this plan I have included some delicious winter and festive meals with a variety of meats (fish, chicken, pork, beef), plus a few salads. Also, the suggestions for breakfasts, lunches, snacks and desserts at the bottom are all Instant Pot recipes!
As always, feel free to move any of the recipes around as needed to fit your family’s schedule. However, you can combine the two for more variety. There is a variety of meats (fish, chicken, beef, pork) as well as soups and salads (on both plans) to keep the whole family happy. My hope each month is that you will find some new favorites to add to your own must have rotation.
