Summer is quickly approaching and warmer weather is creeping in ever so slowly. I love the long summer days and nights. We spend time outside with our kids and friends grilling and making s’mores over a campfire while the kids play til dusk.
Summer really is my favorite time of year. Until it gets super hot. Then I’m ready for cooler weather. But I still like the longer days and nights, so I struggle. And during those hot summer days and nights, I want cooler recipes. Something that doesn’t require me to turn on the oven is usually best.
I grew up in Oklahoma, so I am no stranger to hot summers. But even up north here, we have the blazing sun beating down from time to time. Add in some extra humidity and the oven is not my friend during the summer. For main meals I utilize our Instant Pot as much as possible.
But what about all those picnics, church gatherings and block parties? What can you make and take in large quantities that won’t heat up your house? Chips and salsa are always a favorite, which got me thinking…how can we switch that up a bit?
I was so excited when I found these fruit salsas! These are so versatile too! You can eat them with homemade cinnamon chips. Or try them on a sandwich as a spread. Make your own hawaiian tacos with some shredded chicken and a favorite salsa from the list. Maybe some pita or bagel chips to add a little crunch would be nice.
