Mexican food is my jam. Okay, Tex-Mex, but seriously…it is my happy place. I grew up eating it at least twice a week. I don’t know if its because my mom craved it daily while she was pregnant with me or what, but I love it just as much. Thankfully my kids love it too. Just about any day of the week you can find one of them eating a taco, burrito or homemade quesadilla.
They can literally eat their weight in chips and salsa. And don’t forget the queso! Almost every Tuesday my husband takes the kids to eat at a local restaurant where kids eat cheap and they always get the chips and salsa appetizer to share. Of course they have at least two refills to satisfy everyone.
When we have Mexican food at home, my kids like to have a sort of buffet. Some of them like rice, some like beans, some like both and some like neither. Some like chicken, some like beef and one only likes cheese enchiladas.
One of our favorite additions is Mexican street corn. It is so fun to grill the corn over the fire and then create our own concoction and recipe to our own taste. With grill season in full swing now, this is a must-serve side dish at your next family or friends gathering. And the best part is, there are so many different ways to have it!
