I have never been a big sandwich person. I don’t like cold meat, which is usually a problem for sandwiches. So I grew up eating hot ham and cheese or hot turkey and cheese sandwiches. Put it on a leftover roll, bagel or bun and stick it in the microwave for 40 seconds and I was a happy girl.
Then a new restaurant came to town and I heard the word “panini” and everyone telling me I had to try them. They kept telling me how delicious they were and all the different options you could have on them. I was intrigued, so of course I had to try one. Or two.
Years later, I still love a good panini. I’ve tried my fair share of some delicious recipes, but I’ll be the first to admit I’m a creature of habit. I like the few I’ve tried and stick with what I know. I’m not very good at being adventurous. I like safe.
