As a child, I loved going to my grandparent’s house. My brother and I were the only grandkids on my mother’s side for almost 12 years. And my grandparents only lived 3 miles from our house, so we were there quite often.
I remember spending the night there and waking up to my grandpa making a full breakfast complete with bacon, eggs, pancakes, sausage…you name it, we had it! Sometimes my grandma would make me an egg sandwich, which of course were the best!
I also remember waiting eagerly for lunch time so I could have a grilled cheese sandwich. My grandma made the best grilled cheese sandwiches! And now my kids think my mom (their grandma) makes the best grilled cheese sandwiches, so maybe it’s a grandma thing?!
However, a simple grilled cheese doesn’t always fill me up any more. So when I heard about these “grown-up” grilled cheese sandwiches, I was intrigued. I have always loved a good sandwich, but these are seriously creative!

These would be perfect paired with a nice soup, for a soup and sandwich meal, with a side salad or some chips. However you want to eat them, I guarantee they will be delicious and make you feel like a kid again!
