Here in Florida, we count down the days to cool, Fall weather. The days where we can open our windows to the fresh, crisp air and when we can cook in the kitchen without getting overheated! I love a nice, warm meal from my dutch oven, but in the summer time it can be too hot for warm meals. This is why I look forward to cooking in the Fall, I don’t sweat when I am cooking over my stove top!
I don’t know about you, but Fall is also an extremely busy time of year for our family! All of our new activities have started. Many people have sport practices and games to attend, we have American Heritage Girls and Archery Club. It seems like everyone is always running to and from activities. I love to cook from scratch but on those busy days it can be tough. This is why I LOVE one pot meals!
Cooking from scratch does take time, there is lots of washing and chopping of vegetables, but when you cook in one pot there is less clean up! If we have leftovers, we just stick the pot in the fridge and pull it out for lunch the next day and reheat it on the stovetop! I love how time saving that is. Another way that I like to save time and not feel so rushed is by prepping my ingredients during the day. I will usually have an older child help me get everything ready in the morning or after lunch, before we start another block of school time. Then everything is ready to just throw in the pot at dinner time!
Here are some one pot meals that I think are perfect for Fall! I even broke them down by type in case you are in the mood for Mexican, Italian, etc… these would be great to add to a weekly rotation!
One Pan Mexican Quinoa – this is vegetarian, I love how the quinoa is cooked right along with everything else.
One Pot Burrito Bowls – Yummy and only takes 30 minutes to cool!
One Pot Creamy Chicken Enchilada Soup – I love that this has cream cheese in it and how easy it is to customize!
No Mess One Pot Taco Casserole – everything mixes together in one bowl and then pop right in the oven.
One Pot Wonder Chicken Enchilada Bowls – this meal easily comes together in one large skillet.
One Pot Cheesy Chicken Taco Rice – my kids love cheesy rice!
One Pan Spicy Taco Rice Skillet – this is great for those that like a little heat.
One Pot Paleo Mexican Chicken Stir Fry – I love that this dish is Mexican and Stir Fry together! What a fun fusion of flavors!
One Pot 30 Minute Creamy Tomato Basil Pasta – I love creamy tomato sauce and how this is done in a cast iron skillet.
One Pot Italian Sausage and Rice – love the combination of herbs with the italian sausage.
One Pot Cheesy Pasta and Sausage – the sauce cooks right along with the pasta and this whole dish is ready in 20 minutes!
One Pot Shrimp Parmesan Pasta – the shrimp really dresses this meal up.
25 Minute Skillet Baked Ziti – we LOVE baked ziti, but I don’t love how long it takes to make. This takes only 25 minutes!
One Pot Creamy Tortellini and Sausage – my husband LOVES this dish!
Easy One Pot Lasagna – Lasagna has never been quicker! This entire meal cooks up in 30 minutes.
One Pot Meals Pizza Pasta – the kids would love this!
Creamy Chicken Noodle Pasta – this is like a yummy alfredo sauce chicken noodle soup combo.
One Pot Andouille Sausage Skillet Pasta – this creamy, flavorful dish only requires one pot.
One Pot Wonder Stuffed Pepper Skillet – we love stuffed peppers, and I love that you only need one pan!
Creamy Chicken and Mushroom One Pot – this is an awesome comfort meal with biscuits on top.
Chicken and Biscuits in a Pot – I love using my dutch oven for this.
20 Minute Fully Loaded Baked Potato Soup – this is a favorite comfort meal.
Stove Top White Mac and Cheese – creamy, cheesy and comforting.
