I have been gluten free for about 10 months. For some reason, I have baked MORE in the last 10 months than I have my entire adult years. I am finding that baking gluten free is pretty forgiving. I have been making pumpkin everything and here are a few of my favorites!

Important: I am not about confusing recipes. If it has way too many ingredients or a long list of instructions that confuse me, I don’t even go there. So, with that said, these recipes are easy to make and often the ingredients will be on hand for any gluten free home.

Pumpkin Oatmeal Anytime Squares (vegan, gluten-free, oil-free)

I made these TODAY, actually. I followed the directions almost exactly, however I used a real egg instead of a flax egg. I did throw in about 1 tbsp of flax seeds for extra nutrition though. I cannot have anything with “natural flavors” so I used these chocolate chunks: Enjoy Life Mega Chunks Gluten Free Non-GMO Semi-Sweet Chocolate.

These were AWESOME. I ate too many though, LOL. I love how there is NO REFINED SUGAR. Get the recipe here.

Pumpkin Spice Muffin Mounds (gluten-free + paleo)

I have made these several times already. They are teenager tested (she is not gluten free and is my toughest critic!) These are super quick to make and taste incredible. You may want to double the recipe though, because I think it only makes 6 if I remember correctly. Grab the recipe here!

Decadent Pumpkin Bread

This is seriously SOOO good and easy! We ate this up really quick. Note, It is not a high bread, (I don’t know how else to explain it.) I guess I mean it doesn’t take up a lot of height in the bread pan. It is so moist and you would never know it is gluten free! Click here for the recipe.

Paleo Pumpkin Muffins
(I am not Paleo, but they are gluten free)

I love these muffins. Super moist and yummy. I didn’t have pecans at the time, so I just omitted those. Note, this only makes 10 muffins. Click here for the recipe!
